Featuring Wisconsin Edam Cheese with honey-balsamic roasted cherries, roasted turkey, and arugula on dark wheat bread, this grilled cheese delight has yet to leave a tummy unsatisfied.

Preheat oven to 400ºF. In small bowl, combine cherries, vinegar, honey, and olive oil. Toss to coat cherries. Transfer to small parchment paper-lined baking sheet. Roast 15-18 minutes, until cherries start to soften and release their juices. Coarsely chop cherries when cool enough to handle. Heat griddle or skillet over medium heat. Spread butter on 1 side of each bread slice. Place 2 bread slices in skillet, buttered-side-down. Top each with 2 slices of Edam Cheese, half the cherries, half the turkey, half the arugula, and then 2 more slices of Edam. Top with remaining bread slices, buttered-side-up. Grill until bottom slices of bread are toasted. Flip sandwiches and continue grilling until bread is toasted and cheese is melted.
