Slices of Wisconsin Pepper Jack Cheese sandwiched between hearty marble rye bread and filled with pesto, baby spinach leaves, and avocado make for a palate favorite. Your tongue will love it, too.

COOKING DIRECTIONS

Heat skillet, preferably cast iron, over medium heat. Spread thin layer of coconut oil on 1 side of each bread slice. Turn slices over and spread with pesto. Top with Pepper Jack slices. Layer with spinach and avocado slices. Press the 2 slices together to create a sandwich. Place in heated skillet and grill for 3-4 minutes on each side, flipping once, or until cheese is melted. At end of grilling, place a heavy skillet on top of sandwich to press

  • 2 slices marble rye bread
  • 1 teaspoon homemade or store-bought pesto
  • 2 slices Wisconsin Pepper Jack cheese
  • 1/2 cup baby spinach leaves
  • 1/2 ripe avocado, sliced
