Ricotta

Italian cheesemakers began producing ricotta from the whey that remained after crafting mozzarella and provolone. Ricotta has a creamy white appearance with a milky and delicate flavor. Wisconsin cheesemakers produce ricotta in varieties that range from nonfat to whole milk. Ricotta is an excellent cooking cheese due to its cohesive texture that can bind ingredients together.
