Originating in the Alpine region between France and Switzerland, this cheese variety has been produced since the 11th century in the town of Gruyères. Today, Wisconsin cheesemakers produce award-winning, alpine-style cheese using classic production techniques. While this cheese is scrumptious when young, it becomes increasingly sweet, nutty, and granular with age.
